In my blog on Cilantro & Coriander, Herb of the Year 2017, I promised to post a recipe. It was hard to decide which recipe to post from my many favorites using cilantro. Here is a bright and flavorful salsa that is great with chips, on a taco salad or quesadilla, and with anything from the grill! The combination of hot chiles with sweet fruit, the tartness of lime and pungency of cilantro make for a salsa bursting with flavor. If habaneros are too hot for you, use jalapenos or serranos.



Mango Habanero Salsa with Cilantro

This is a flavorful, fruity salsa that is good with chips or served as a relish with seafood or poultry.If you like salsa really hot, use 2 habaneros, otherwise use just one.


2 ripe mangos, diced small

About 1/2 cup chopped scallions or onion

1/2 red, yellow or orange bell pepper, diced fine

1 or 2 habaneros, toasted, stemmed, seeded, and minced

About 1/4 cup chopped cilantro

Juice of 1 lime

Pinch or 2 of sea salt


Combine all of the ingredients in a bowl and toss well. Taste for seasoning. Let stand for 1/2 hour before serving. Makes about 3 cups.
