Empty fridge? We all know how it feels to see that view when you're starving. There may be some eggs and veggies but nothing we can cook with. However, is that really the case? Is there a meal which transforms the leftovers in delicious dish? A few days ago i stumble upon the same problem. I wondered what to prepare with two eggs,and some rice and here is what i came up with.



2-3 carrots

1 big vegetable marrow or 2 smaller ones

1 cup of rice

2 eggs

1 carton of yogurts

2 tablespoons of flour





Virgin olive oil

How to cook vegetables with rice?

Clean the rice so that the farina to wash away. It's sticky and wont help your rice to be delicious and crisp.

If you don't want to use alumina foil, put four times the volume of the rice in water. With foil you'll need twice as less water.

After the rice, peel and cut all the veggies and throw them in with two spoons of olive oil and all the dry spices. Mix everything and bake it in a preheated oven for not less then 30 minutes.

In the meantime, mix the yogurts with the two eggs and the flour. Mix well and add fresh parsley. Add salt, pour the mix over the meal and continue baking for about 15 to 20 minutes more.

Once the meal is ready, take it out of the oven and put it aside for at least 20 minutes. This is the time the meal requires to cool and stiffen.

While waiting for the meal to cool, we can prepare a great Greek salad with feta cheese, tomatoes, sliced cucumber, olives, olive oil. The salad requires you to mix all of that, add the oil and some fresh herbs and it's ready.

Housewife's tip: use the generated heat in the oven to clean it. Five to ten minutes after baking commercial ovens are still hot enough to loose grease and grime but cold enough to be cleaned by hand. Of course, each cleaner must follow all safety requirements and wear protective gloves. Many oven cleaners recommend the usage of green solutions especially for families with small kids and pets. According to them these are the two most vulnerable groups which must be protected.

However, the main benefit of a clean oven is the even baking which guarantees not only taste but the lack of overdone areas, which contains extra carbon. It's also a good idea to clean the whole oven - inside and out, once a year. That includes disassembling it and check of the electric systems and the cables. Grease on cables and switches, or naked heaters may cause fire, so regular cleaning and check is more of a safety issue than anything else.

You probably notice how strong i emphasize on veggies and that is not a coincidence. They are extremely important for the proper functioning of our bodies. Actually, we can survive longer without meat compared to living without veggies. I had a friend who decided to eat only meat and vitamin pills and he suffered from bad eye problems just several weeks later and went back to normal eating. This is how important the veggies really are but if you don't believe me, take the word of the specialists.

1st reason to eat more veggies - phytochemicals

This is basically stuff produced by the vegetable itself to protect it during growth. However, phytochemicals are extremely beneficial for us too. In the same way they protect the plant, they protect us too. Tomatoes and carrots are particularly rich of phytochemicals. Second thing is that these are great antioxidants too, which for bodybuilders means easier and better muscle repair and for us is simple health.

2st reason - fibers

Fibers slow the digestion, control the blood sugar and the appetite and make us absorb more of the food we eat. Professionals strongly recommend to add veggies to our lunches. That decreases the chance of energy crashes and concentration losses and makes us feel sated.

3rd - Vitami C

One red bell pepper contains more Vitamin C than we need for a whole day. These can be eaten both raw or cooked. Thanks to the improved blood flow and oxygen richer blood our skin will look significantly more appealing.

4th reason - weight loss

We may eat almost unlimited amounts of vegetables and still lose weight. The actual energy contained in veggies is the same our body needs to digest them, so actually eating them (except for corn and beets) makes us lose not gain weight, which cannot be a bad thing, isn't it?

So, the bottom line here is simple - even if you don't have tons of ingredients, add some veggies and bake them in the oven. It's healthy, easy to prepare and even cheap.
