Squash, Apple, and Onion Pizzacomments (0) July 31st, 2008
1/2 cup coarsely chopped walnuts
1 lb. pizza dough (softball size)
1 tbsp. walnut or vegetable oil
1 medium sweet onion, sliced thin
1 medium apple, peeled and sliced thin
1/4 tsp. freshly grated nutmeg
1/2 tsp. crushed dried marjoram
Salt and freshly ground pepper
1 cup cooked, puréed winter squash
1 cup grated cheddar cheese
2 generous servings
In an oven or toaster oven, lightly toast the walnuts for 10 min. at 250°F, checking to see that they don’t burn.
Preheat the oven to 500°F. Lightly grease a pizza pan and sprinkle on some cornmeal.
On a lightly greased surface, roll or use your fingers to press the dough into a circle 12 in. to 13 in. in diameter. Brush the surface of the dough with 1/2 tsp. to 1 tsp. of the oil.
Add the remaining oil to a skillet over medium heat. Add the onion and sauté for 3 to 4 min., until it is translucent. Stir in the apple, nutmeg, and marjoram. Sauté about 3 min. longer, until the apple is tender. Season with salt and pepper, and remove the mixture from the heat.
Spread the squash evenly over the dough. Scatter the toasted walnuts on top. Spread on the sautéed onions and apples, and sprinkle the cheese over all.
Put the pizza on the lowest rack in the oven and bake for 10 min. or until the bottom is brown and crisp. Slide the hot pizza onto a board, cut, and serve.
Note: You can use a prepared pizza crust in place of pizza dough.
