Strawberry "Soft Serve" Yogurt

1 qt. fresh strawberries, rinsed, drained, and hulled
1/2 cup sugar
Juice of one lemon
1 cup plain low-fat yogurt
Several tbsp. skim milk
6 servings
Halve about half of the berries and combine them with the sugar in a medium nonreactive saucepan. Bring to a simmer over low heat, stirring occasionally for about 5 min. When the sugar has dissolved, transfer the mixture to a food processor, and add the remaining berries.
Process the berries to a smooth purée, then transfer to a shallow bowl and whisk in the lemon juice and the yogurt. Place the bowl in the freezer and let the mixture freeze solid, taking the bowl out and stirring it about every 30 min. When the mixture is solid—3 to 4 hours—transfer the strawberry ice to the food processor. Process the mixture in 5- to 8-second bursts, adding a teaspoon or so of milk at a time to make the mixture smooth.
Note: This can also be made in a blender.
