Spring Cole Slaw

Ingredients:
3 tbsp. country-style mustard
3 tbsp. balsamic vinegar
1 tbsp. sugar
1/2 cup vegetable oil
2 tbsp. milk or half-and-half
6 cups shredded cabbage
3 cups thinly sliced spring radishes
1/4 cup minced chives
1/4 cup minced fresh herbs, a mixture of dill, parsley, and lovage
1/2 tsp. salt
1/4 tsp. pepper

In a food processor or a bowl, combine the mustard, vinegar, and sugar and pulse or whisk to combine. Add the oil, a little at a time until it thickens. Add the milk and pulse or whisk again. Set aside.

In a large bowl, toss the cabbage and radishes. Add the dressing, fresh herbs, salt, and pepper, and mix well. Chill the slaw for up to several hours. Taste, adjust the seasoning, and serve.
