Pipérade

1 Tbs. olive oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
2 red peppers, quartered and diced
2 tomatoes, seeded and chopped
2 heaping Tbs. finely chopped summer savory
Salt and pepper
4 eggs
4 servings
Heat the oil in a large frying pan and gently sauté the onion and garlic for about 5 min. Add the peppers and tomatoes and cook for about 5 min. Stir in the savory, and continue to cook for about 10 min. Add salt and pepper to taste.
Make 4 small “nests” in the mixture and crack in the 4 eggs. Season them and allow to cook about 5 min., then cover the pan and cook 2 min. more, or until the eggs are as firm as you like them. Alternatively, stir the eggs around to scramble them, which will take only 3 to 4 min. Serve hot, straight from the pan, with a warm baguette.
