Broccoli with Garlic and Hot Peppers
comments (0) March 4th, 2009Ingredients:
2 large broccoli heads, about 2 lb.
1/4 tsp. crushed red pepper flakes
3 cloves garlic, pressed or minced
1/4 cup olive oil
1/2 tsp. salt
1 lime, cut into 6 slices
4 servings
Trim broccoli leaves and put the whole head into a large pot of cold, salted water. Place over high heat and cover. When the water comes to a boil, remove the head. Cut the top into small pieces of uniform size. Peel the stalk and cut it into pieces.
In a large skillet, heat the pepper and garlic in the olive oil over high heat. When the garlic and olive oil begin to sizzle, add the broccoli. Stir fry quickly to coat all surfaces.
Add the salt and 2 Tbs. of water, lower the heat, cover, and cook over low heat until broccoli reaches desired tenderness, 10 to 12 min.
Serve with lime wedges for squeezing liberally over the broccoli.
