Basic Cornbread

One 9-inch loaf
2-1/2 cups flour
1-1/2 cups yellow corn meal
1 Tbs. baking powder
1 tsp. salt
1/2 cup sugar
2 large eggs
1-3/4 cups buttermilk
1/4 lb. butter, melted

Preheat the oven to 350°F. Grease a 9-inch loaf pan and line it with parchment or waxed paper.

In a medium bowl, combine all the dry ingredients. Break the eggs into a small bowl and beat lightly. Stir the buttermilk and melted butter into the eggs. Pour the liquid ingredients into the dry ingredients and stir to form a smooth batter. Pour into the prepared pan. Bake for 30 minutes. Check to see if it is done by inserting a toothpick into the bread. If the toothpick comes out dry, the bread is done. Cool in the pan before turning out.
