Cucumber and Yogurt Raita

Ingredients:
1 cup peeled, coarsely grated cucumber, with some of the water extracted
3/4 cup plain yogurt
1-1/2 Tbs. minced dill and parsley, or cilantro and mint
Salt

4 servings

Combine the ingredients. Salt to taste and chill until ready to serve.
