I loved amaranth as an ornamental long before I knew its young leaves could be eaten like spinach...

totoro writes: You can also grow amaranth as a grain plant and a natural dye plant. I'm growing Red Leaf Amaranth this year - my first time growing any amaranth. It was listed under "greens" but I'm going to try harvesting the seeds for grain as well. I'll have to let you know how it turns out in the fall.
