Mâche with Mushrooms and Red Onion

Ingredients:
1/2 lb. mâche, washed and dried
1/4 lb. mushrooms, thinly sliced
1/2 small red onion, thinly sliced
1 Tbs. chopped parsley
3 to 4 Tbs. extra-virgin olive oil
Juice of half a lemon
1/2 Tbs. Dijon mustard
1 garlic clove, crushed

4 servings

Gently mix the mâche, mushrooms, onion, and parsley together in a bowl.

Prepare the dressing by whisking together the olive oil, lemon, Dijon mustard, and garlic. Pour the dressing over the salad, toss, and serve immediately.
