How to Candy Flowers

Violets and Johnny jump-ups are ideal for candying. After you pick them, put their stems in water until you're ready to use them.

Viola   Coat flowers with egg white and water
 1. Start with a healthy, vibrantly colored flower.   2. Use an artist's paintbrush to coat each flower thinly with eggwhite and water.
     
Dip in superfine sugar   Dry on waxed paper
3. Carefully dip and sprinkle the flowerswith superfine sugar.   4. Lay the flowers on waxed paper to dry, and snip off the stems.
