Orange Peel and Rosemary Butter Cookies

1?2 lb. butter, at room temperature
1 tsp. vanilla extract
2/3 cup sugar
2 eggs, beaten
Grated zest of one orange
1 tsp. minced fresh rosemary
1-1/2 cups flour

Makes about 2 dozen cookies

These tender cookies should be handled with a light touch.

Preheat the oven to 375°F. Lightly butter two cookie sheets.

Cream the butter and vanilla, then add the sugar, eggs, orange zest, and rosemary and blend well. Sift the flour and the salt together and add to the creamed ingredients; combine thoroughly.

Drop by teaspoonfuls onto the prepared sheets. Bake for 15 to 18 minutes; the cookies should brown slightly around the edges. Remove the cookies from the oven, allow to cool two minutes, then transfer to a rack to cool completely. Store in a tin. Freeze if desired.
