Crispy Kale

Ingredients:
1 bunch of kale
Olive oil
Salt

Preheat your oven to 350°F.

Wash and dry the kale, and chop it very coarsely. Arrange it on a baking sheet in one layer. Mist the kale with olive oil. If you don't have a mister, you can drizzle the oil over the kale, but try to cover the kale evenly.

Place the baking sheet in the oven on the bottom rack and bake for ten minutes. Remove the baking sheet from the oven and fluff the kale so it gets crispy all over. Put it back in the oven and bake for ten more minutes.

Remove the sheet from the oven and check that it's fully crispy and crackly. If it's not, continue baking, checking it frequently. When it's fully crisp, add salt to taste and serve.

I've found that I need to remove the kale and stir it often or it gets slimy and bogged down in the oil. I think an oil mister would work perfectly for this recipe.

KarenBudnick writes: I haven't made this in years - the less oil the crispier. Try it with seasoned salt!
