my Date square Recipe

Ingredients:
Please read the recipe to the end before making.
1- 500g package pitted dates (you will need 2/3 of this)
Enough fresh brewed med strong coffee to cover dates.
Break up dates and put into large pot ,bring to boil, turn heat down to a simmer watch carefully stir often as they burn ,when dates are nicely softened remove from heat . cool until room temp then add
2 tsp vanilla extract stir well.

CRUMBLE:

3 cups old fashioned oatmeal
2 1/2 cups whole wheat flour
1 cup dark brown sugar packed
1 tsp baking soda
1 tsp salt
1 cup coconut oil
1 cup unsalted butter

While the dates are cooling ( I put them in the fridge) use a fork to break all lumps in the coconut oil this must be done ! then add it to your butter set aside . Combine all remaining dry ingredients to a large bowl and combine until well mixed . Drop butter and coconut oil in lumps into the dry . Use a pastry blender or your fingers to combine ,it will be very "wet" line a 9x13 with parchment , press half of the crumble into the bottem, then spread cooled dates over the base , evenly; use remaining crumble to cover the dates . Pat down put into a  preheated 350 oven. Bake for 50 to 75 minutes until a deep golden brown. Remove from oven when cooled enough to handle use 6 paper towels one on top of the other put squares on top  of the towels this will draw the excess oil from the squares. I tried to reduce the amount of fat but it made the squares very crumbly I did develope this recipe myself so please try it ;no one has ever not loved! it
