I have many yellow, orange, and red peppers in my vegetable garden. I want to make salsa to can, the tomatoes are ripening very fast. My question is- How can I speed up the process of color change, so I can use them soon. Most are stilll green and starting to change very slowly. I am afraid they will be too late to use with the tomatoes. We have a blight in them this year and they are fading fast. I will appreciate any ideas from all the gardeners out there. Thanks, Cathy
