I buy Lacinato Kale at my local co-op and it is always beautiful and delicious! The dark green color makes me feel extra healthy! I'm looking forward to trying to grow this variety!

Kale chips are delicious, but I most often prepare it the same way I make collard greens, or any other type of leafy green.

First I sauté some garlic and onions (optional) in a large stick pot. Then I put in a large quantity of chopped kale (it will cook down quite a bit). I then top it with some chicken broth, a couple of pieces of crumbled bacon and let it sauté until tender. I add salt and pepper to taste and a dash of cayenne for some heat.

For a vegetarian version you could use veggie broth and omit the bacon.

It is absolutely delicious! One of my family's favorites!
