I have known about eating squash flowers since childhood, but never on its own. Usually it formed part of a vegetable dish known in South Africa as "morogo" - the tips and male flowers of the pumpkin / squash plant is snipped off to encourage new shoots. It is then washed and gently cooked, sometimes with onions, but also with dessicated, raw peanuts. You could also add some tomatoes, chopped, and a little flour for thickening. Hmmmm... delicious!!
We used to eat this with thick, unsalted maize porridge, but it is great with any other starch, such as mashed potatoes or rice.
