I'd like to offer two suggestions.

First: don't plant mixed seeds because the more "field green" types tend to outgrow the more sweet and mild types of lettuce.

Second: based on my experience (so watch out), harvest early in the morning and put the leaves directly into a bucket of cool water. Wash them and leave them soaking in the last batch of rinse water until late afternoon. I theorize that the water is taking some of the alkaloids out while plumping them up - both things causing the impression of sweetness.

Oh, and thirdly: learn to enjoy the the tartness. People pay extra for it at fine dining establishments. Find some dressings that work well it and don't forget the olive oil: Many of the vitamins/minerals are fat soluble only and need a carrier. S.
