Grilled Tuna with Thyme

Marinate the tuna for 30 minutes, turning once.

1 clove garlic
1/3 to 1/2 cup loosely packed lemon thyme leaves
1/4 cup dry sherry
2 tbsp. soy sauce
1-1/2 lb. tuna steak

Peel the garlic and put it through a garlic press, or mash it with the flat of a knife blade, and then chop fine. Combine the garlic, thyme, sherry, and soy sauce in a flat-bottomed container. Marinate tuna steaks in this mixture for 30 min., turning after 15 min.

Grill tuna over a wood or gas fire just until the layers of tuna start to separate, 4 to 5 min. a side for 1-in. thick steaks.
