A light dressing enhances the ingredients of a composed salad without overpowering it.

Ingredients:
1/3 cup fresh lemon juice
1 or 2 garlic cloves, minced
1 tsp. dry mustard
1 tbsp. chopped fresh herbs (Italian parsley, thyme, oregano, marjoram)
1 tsp. kosher salt, or to taste
1/2 tsp. freshly ground black pepper
3/4 cup extra-virgin olive oil

Makes 1 cup

In a small bowl, mix together the lemon juice, garlic, mustard, herbs, salt, and pepper. Whisk in the oil.
