Beet Vinaigrette

1 cup vinegar
2-3 cloves garlic
2 Tbs. freshly ground pepper
1 tsp. salt
1/4 cup sugar
1 large cooked beet, roughly chopped (3/4 to 1 cup)
1 cup oil

Makes about 3 cups

Put all ingredients except the oil in a blender or food processor and purée. Then, with the motor running, slowly add the oil.
