Peas with Mint

1 lb. fresh shelled green peas
1–2 Tbs. butter
Salt and pepper
1–­2 tsp. finely minced mint

4 servings

Gently steam the peas for a few minutes, until barely done. Remove from heat and put into a warm bowl. Stir in butter, salt, and pepper to taste. Add the mint, being careful not to use too much, as it will overwhelm the peas.
