Shelby24019 writes: The rabbits ate the tops off of our beets when they were about half way grown but they came back out and did fine. If beets are planted in August and the soil is pulled up around them after they start growing they will be fine until Christmas. We had some out of our VA garden this year in December.

I attempted to roast them and they came out horribly (but did lead to a Fine Gardening blog post).

I just think they're beautiful!

KarenBudnick writes: I just placed an order for "Baby Ball" beet seeds - they shouldn't need peeling - no red fingers or countertops! I recently tried Beet & Goat cheese salad at a local restaurant - apparently a classic I hadn't heard of. I would have loved it if they hadn't used canned Harvard beets!

GEide writes: Beautiful! I planted red and golden beets last year, but only took one home to eat. I cooked it up using a recipe from the Fine Cooking blog. I'll post a link if I can find it.

While I was waiting for them to get bigger, a critter ate them all! Oh well... I'm excited to try them again this year.
