Jodi, thank you for that, I too use cilantro (or coriander as we call it here in Australia) in everything. But I could cry when I see how much of it you trim! Some of the best flavour comes from the root itself and it is what is used most in Asian dishes. Trim the stringy bits off the roots but the roots chopped up thinly add an amazing flavour to any dish!!
